After months of requests from customers looking for a quality Japanese bread knife at a more approachable price point, we finally managed to get our hands on a limited number of Hatsukokoro bread knives. As always, we couldn't resist taking a few a step further.

This particular knife was assembled here at Kakushin as a true 1 of 1 custom build, pairing Hatsukokoro's highly regarded 240mm bread knife blade with a custom handle crafted from natural olive wood and flowing blue epoxy. The warm, organic grain of the olive wood blends naturally into the translucent blue resin, creating the impression of water moving through wood. Elegant, distinctive, and impossible to reproduce exactly, this handle transforms an already excellent tool into a genuine one-of-a-kind piece.
