This one-of-a-kind Hatsukokoro bread knife combines the practical performance of a Japanese-made 240mm serrated blade with a custom handle assembled here at Kakushin from natural olive wood and flowing violet epoxy. The contrast between the earthy warmth of the olive wood and the rich purple resin creates a look that feels both refined and artistic, while remaining elegant enough for everyday use.

No two custom handles are ever identical. The movement of the epoxy, the grain of the olive wood, and the way the materials meet each other ensure that this knife will forever remain a true 1 of 1. Once sold, this exact configuration can never be recreated.

Over the years, customers have repeatedly asked us for a Japanese bread knife that delivers genuine cutting performance without venturing into extreme price territory. When we finally secured a small batch of these Hatsukokoro bread knives, we knew a few deserved custom treatment.

Behind its understated appearance lies a remarkably capable cutting tool. The 240mm blade features aggressive, precisely machined serrations designed to cut cleanly through everything from crusty sourdough and artisan breads to delicate pastries, sandwiches, tomatoes, citrus, and large fruits. Instead of crushing soft interiors or tearing delicate surfaces, the teeth bite confidently and guide the blade through with surprising ease.

The blade itself is crafted from DSR-1K6 stainless steel, offering excellent corrosion resistance and low-maintenance ownership. More importantly, the geometry has been exceptionally well executed. A thicker spine near the handle provides stability and confidence, while the blade gradually tapers toward a remarkably thin cutting section that minimizes resistance throughout the cut.

The result is a bread knife that feels lighter in use than its size suggests, delivering smooth, effortless slicing with a level of control rarely found in mass-produced serrated knives.
